The most basic of basic recipes, and a great one for a lazy weekend afternoon! If you don’t want to freeze the broth then it keeps for about a week in the fridge.

Chocolate Cake in a Mug (Vegan!)
This takes about three minutes to make (literally!) and it is SO GOOD. It really does have the taste and texture of chocolate cake. It’s not the healthiest snack, but it’s a great craving satisfier and actually plenty filling.
You’ll need:
*1/4 cup flour
*3 Tbsp sugar
*2 Tbsp cocoa powder (unsweetened)
*2 Tbsp melted margarine
*2 Tbsp water
Mix the dry ingredients in the mug first, so that they’re spread out (otherwise you might have some really chocolate-y parts, some really sugar-y parts, and some just flour -_-). Then add the liquids and mix well- be sure to get the bottom of the mug too!
Microwave for 2 minutes, let cool, and enjoy!
Calories:
I used a low-fat margarine, and it came out at about 450 cals for the whole mug.
If you’re really worried, you can try cutting some of the sugar, but I would recommend just halving the recipe because it really is filling ^^

Tomato and Bell Pepper Pasta Sauce
Ingredients:
- 1 orange bell pepper, finely diced
- 3 medium-sized tomatoes, finely diced
- 1 small can of tomato paste
- 3-5 cloves of garlic, crushed and finely chopped
- 1 medium red onion, roughly chopped
- 2 tbsp extra virgin olive oil
- To taste: cayenne pepper, oregano, cumin, celery salt, ground coriander seed, pepper, salt
- 1 tbsp finely chopped fresh basil
Method:
- In a frying pan over medium-high heat, cook the onions in the ev olive oil until glossy and slightly browned, about 5 minutes.
- Add the bell pepper and garlic, and cook for another 3 minutes.
- Add all other ingredients, and cook for another 5 minutes.
- Remove from heat, and add all ingredients to a blender. (You may need to do this in two batches)
- Blend on a low setting, gradually increasing speed until blended to a sauce consistency.
- Set the sauce aside in a bowl until ready to use.
- You can add the sauce to a saucepan, and re-heat. Then, add the pasta to the sauce pan and toss to coat

BUT i went a little nuts and added a bunch of stuff to fill it out:
- tinned tomatoes
- chick peas
- kidney beans
- mustard
- soy sauce
- pepper
- mixed herbs
- hot chilli powder
- cornflour
It was very filling, I think I need to experiment more if I want to get the desired effect though, I kept eating little balls of cornflour which wasn’t that pleasant. On the whole, I think it was a positive step towards veganism…I still don’t know how i’m going to live without milk in my tea though…
